How can you change the required intensity for a workout to be counted towards your exercise?

How can you change the required intensity for a workout to be counted towards your exercise ring for when you are doing a lower intensity workout than normal due to injury or illness?

I have walked at a slower rate for over an hour at a few different times and not had it count towards my exercise ring? It would be nice to be able to adjust this for times of illness or injury so that your workout is still counted.
