Replace OS on an older MacBook Pro

We have an older (2004) MacBookPro that is presently running El Capitan. We need this older setup to run some infrequently used programs that aren't compatible with more current Operating Systems. On the advice of Apple's Genius Bar guy, to solve some software problems, we need to completely remove the present OS and replace it with a new copy of El Capitan. After reading Apple's instructions on how to do this, what OS version will be installed? The "How To" article sent to me by the Genius guy, says the new OS will be the original OS or the nearest to the original. So, how can I know which OS will be installed before it's too late to turn back? Thanks in advance!
