How do I get Safari to remember my sign ins?

I bought a new Mac mini last May and I'm running Mojave 10.14.6. I should start by saying, I am a Mac guy and have been using a Mac for work since 1987, but I am NOT a system guy at all. I do know my Adobe software inside/out, but Mac system stuff has never been my thing. Anyway, since I got the new Mac, there is this one thing driving me crazy…

I go to different sites that I have to sign in, and I click "remember me", but it never does, and I constantly have to sign back in. On my old Mac, I could shut the Mac completely down, restart, launch Safari, and NEVER have to sign back into my sites. I don't know…is that a good thing or bad thing? I am the only one using my computer, and when my computer falls asleep, you need my password to wake it up. Anyway, I don't know how to remedy this sign-in thing, as I said system things are not my specialty. So how do I go back to the way it worked on my old Mac?
